Greek Yogurt Parfait with Roasted Grapes

Roasted grapes are a favorite of mine – not only are they super easy to make, but they add the most wonderful sweet touch to yogurt parfaits, oatmeal and even salads (check out a variation here).

These are best served warm, but leftovers can be refrigerated for up to 48 hours.

Greek Yogurt Parfait with Roasted Grapes

This breakfast parfait doesn't just look pretty - it tastes amazing, too!

Ingredients
  

  • 1 tbs extra virgin olive oil
  • 1 cup red seedless grapes
  • 1 cup plain greek yogurt
  • 1 tbs walnuts, chopped
  • 1 tsp honey, for drizzling

Instructions
 

  • Preheat oven to 450 degrees. On a sheet pan lined with parchment paper, toss grapes with olive oil. Roast in 450 degree oven for 15-10 minutes. Cool for 5 minutes. Add yogurt to bowl, top with roasted grapes and walnuts and drizzle with honey.
