The Modified Caesar

Dill seems to be one of those ingredients that people either love or hate (I think the same goes for cilantro). I fall in the former of those categories, and my love of the stuff is probably a little bit closer to an obsession. Ever heard someone say “everything’s better with chocolate?” Just replace chocolate with dill, and I’m on board.

Since we started following the Mediterranean WOE, I’ve been making all of our dressings from scratch. It’s incredibly easy to do, and utilizing fresh ingredients makes a world of difference in the flavor department – with no “surprises” like added sugar. Delicious and healthy? Now we’re talking.

This salad is a fantastic lunch, or, without the chicken, would be a wonderful accompaniment to dinner. You could also easily substitute leftover salmon for the chicken, or go meatless and opt for a hardboiled egg instead.

The Modified Caesar

A light but filling salad packed with flavor.

Cook Time 5 minutes
Total Time 10 minutes

Ingredients
  

  • 1 tbs fresh lemon juice
  • 1 tbs olive oil mayo
  • 2 tsp fresh dill, chopped
  • 2 cups baby arugula
  • 2 tbs cucumber, sliced
  • 1 tbs red onion, sliced
  • 1 tsp capers, drained
  • 2 tbs parmesan reggiano cheese, shaved
  • 1/4 cup rotisserie chicken, shredded or sliced

Instructions
 

  • Mix lemon juice, mayonaise and dill in a small bowl until well blended. In a separate bowl, add remaining ingredients. Pour dressing over top and mix well. Top with freshly ground black pepper.
