Parmesan Crisps

These days, I’m all about making things from scratch. I love knowing exactly what’s going in the food my family eats, and though that might mean that I’m spending a little bit more time in the kitchen, I’m willing to spare an extra 15 minutes – especially when I can get my kids involved. As often as we can, we make dressings, sauces, and even snacks at home.

These parmesan crisps have popped up several places recently – heck, you can even buy them in bulk at Costco. While there’s nothing wrong with buying the pre-made version, they’re super simple – and fun – to make at home. My daughters both love to make these, from start to finish.

Go ahead and preheat your oven to 400 degrees (have a toddler? use this step to go over your numbers!). While the oven preheats, line a sheet pan with some parchment paper. Then, get ready to make your crisps.

You’ll start with some fresh parmesan cheese. You can usually find this near the produce section of your grocery store, sometimes with other specialty cheeses.

Shred or grate the cheese (carefully!) into a small bowl. I used the shredder attachment for my mandolin – you can find a similar one here.

Add the pepper and italian seasoning to the cheese, and stir to combine.

My kids love this next part. Grab a tablespoon, fill it with the cheese mixture…

And create little cheese rounds on the sheet pan. Repeat until you have 6 cheese rounds, making the rounds as even as possible.

Pop them in the oven, and set a timer for 6 minutes. My kids like for me to turn on the oven light so they can “check” on the crisps every so often.

When ready, the cheese should be melted, bubbly and SLIGHTLY brown, but not dark. If they aren’t quite melted, give them another minute before removing them from the oven.

Once the crisps are done, let them sit for about 5 minutes to cool. Serve immediately, or store in a sealed container for later.

These make great snacks, but they’re also fantastic crumbled over salads or dipped in soups. Enjoy! And if you make these, please share with me! I’d love to hear what you think.
