Air Fryer Mahi Mahi with Peach & Arugula Salad

I have to say, I have a bit of a love affair with my air fryer.

I’ve had my Ninja Foodi for a little over 6 months now, and I’m basically obsessed with that thing. I’ve made a variety of dishes – from “simple” things like chicken (including wings that are delicious, crispy and EASY), fish and soups to “fried” pickles (with quinoa “breading” – now THOSE were amazing), falafel, (to die for), quesadillas, crispy chickpeas…

Okay, I’ll just go ahead and stop there. You know, before I drool all over my keyboard.

I had high expectations of the Foodi, and it hasn’t let me down. I actually find myself making excuses to use it. It’s easy to use, easy to clean, and does a fantastic job. Color me not only impressed, but a huge fan to boot.

The Foodi was the perfect choice for this particular dinner for a few reasons: one, it was somewhere in the 90’s outside, which meant I wasn’t not exactly keen on heating up my kitchen by using the oven, two, because I’d had great luck with every seafood dish I’d made in it up until now and three, because, honestly? I just like it that much.

While I prepared the peach and arugula salad on my own, my kids were more than happy to help me bread the Mahi Mahi. Get your kiddos in the kitchen and let them do the flour coating, egg wash and breading – it’s a great opportunity to teach them a new trick.

Yes, they’ll make a mess. Yes, you’ll have to clean it.

But they’ll have a great time, and it’ll be worth it. Trust me. Happy cooking, y’all!

Air Fryer Mahi Mahi with Peach & Arugula Salad

The air fryer makes quick (and delicious) work of wonderfully mild Mahi Mahi. Paired with a simple salad of peaches, red onion and arugula, this dish comes together in less than 30 minutes.

Equipment

  • Ninja Foodi or Air Fryer
  • Food Processor
  • Toaster Oven

Ingredients
  

  • 2 Mahi Mahi filets (about 6 oz each)
  • 2 slices Dave's Killer Bread (21 Grains) or whole wheat bread of your choice
  • 1/2 cup parmesan cheese, freshly grated
  • 1 egg, large
  • 1/2 tbs milk
  • 1/4 cup whole wheat flour
  • 1 tbs white balsamic vinegar
  • 1 tbs extra virgin olive oil
  • 1/4 tsp dijon mustard
  • 3 cups arugula, lightly packed
  • 2 peaches, pitted and sliced
  • 1/4 cup red onion, thinly sliced

Instructions
 

  • Toast bread in toaster oven until lightly browned. Break or cut into small cubes, place in a food processor and pulse until finely ground.
  • Add parmesan cheese to bread crumbs and stir until well combined. Set aside.
  • Whisk the eggs and milk together in a bowl and set aside.
  • Set up your "breading" station - one container or area (I put my dry ingredients on a strip of plastic wrap to cut down on dirty dishes) for the flour, one for the egg wash and one for the bread crumb and parmesan mixture.
  • Lightly season Mahi Mahi with salt and pepper. Coat in the flour, shaking off the excess before placing in the egg wash. After coating in the egg wash, place the filet in the breading and turn to coat. Repeat with remaining filet.
  • Power on the Ninja Foodi. Insert the "Cook & Crisp" basket and set the Ninja to the Air Crisp function at a temp of 390. Close crisping lid and allow the Foodi to preheat for 3 minutes prior to adding the Mahi Mahi.
  • While the Foodi heats up, whisk together the white balsamic, olive oil and dijon mustard. Place peaches in a medium sized bowl and pour vinegar mixture over top. Toss to combine, and set aside.
  • Carefully add Mahi Mahi to the "Cook & Crisp" basket. Allow to cook at 390 for 10 minutes, or until done.
  • Add arugula and red onion to peaches and toss until well combined. Serve immediately.

    I can see there is an air fryer in my future. This looks so tempting and I’ll bet the white balsamic vinegar and the dijon mustard give this quite the flavor pop! I’ll probably use King Arthur’s for the flour but will have to ponder what to sub for the bread for a gluten-free version. Look forward to trying it.

    Changed it up a bit, used almond flour for “keto-esqe” meal. followed most of the rest of your recipe for the mahi-mahi, except added jalapemo olive oil to coat the fillets before breadjng. FYI, with frozen fillets, the cook time increased to 15 mins, turned out fantastic!
