Spinach Salad with Apples and Poppy Seed Dressing

- 1 tbs fresh thyme leaves
- 1/4 tsp kosher salt
- 2 tbs extra virgin olive oil
- 1 tbs agave nectar
- 1 tbs apple cider vinegar
- 1/2 tsp dijon mustard
- 3 tbs buttermilk
- 1 tsp poppy seeds
- 2 tsp plain greek yogurt
- 1 cup shredded cooked chicken breast
- 1 Gala apple, thinly sliced
- 2 tbs chopped walnuts
- 3 cups baby spinach
Whisk together thyme, salt, EVOO, agave nectar, apple cider vinegar, dijon mustard, buttermilk, poppy seeds and greek yogurt in a small bowl until well combined.
Combine spinach, chicken, apple and walnuts in a medium bowl. Pour half of dressing over top and mix well. If desired, add more dressing a little at a time and stir to combine. Refrigerate remaining dressing.
